Shepherd Peppers Pie


Less time cooking at work= More time cooking at home. Here's a favourite I haven't made since the cool weather rolled in last year. And really. The temperature, for late November in Ontario, ain't too cool yet. Anyhoo. Let's get cookin'.

Where's the Beef!

One each of a large yellow, orange and red shepherd pepper (you can use the regular garden variety if you like), seed em out and dice em up!
1.5lb extra lean ground beef (we're going to add back the fat with good for you fat, olive oil)
3 tbsp extra virgin olive oil
1 large spanish onion, diced
4 cloves raw, minced garlic
1/4 cup worchestershire sauce
1 tbsp louisiana hot sauce (for flavour....add more for kick!)
1 cup beef stock or broth
2 tbsp, sifted all purpose flour
1 tbsp paprika
1 tsp thyme
1/8 tsp each of mustard and onion powders
salt and fresh cracked black pepper to taste

method~ Heat oil and garlic in a skillet. Add diced onion and cook slightly. Crumble the raw beef into the pan and continue to break it up as it cooks using a spatula. Once browned, add the diced peppers. Let cook for a few minutes. Add sifted flour and seasonings. Then stir in liquids. Bring to a bubble, reduce and let simmer for 5 minutes. Pour into suitable baking dish.

Roasted Garlic Tater Topper

10 medium red potatoes, washed and skins left on
1/2 cup veggie stock or broth
1/2 cup heavy cream
2 tbsp butter
6 cloves roasted, mashed garlic
salt and pepper to taste

method~ boil em. drain em. Add the stuff to em. Mash em. Spread em (not your legs, the mashed- over top of the beef mixture)

Toss in a preheated 375F oven for 15 minutes. Then broil, to brown the top, for a scant 5 minutes.

Cool em. Eat em. Eat em up.

It's Not Just the Hormones

At 36 weeks, visits to the doctor change from bi-weekly to every week. Contrary to what it may seem, these more frequent appointments make the time go by slower. On Wednesday, I had one such appointment. I walked into the office and approached the reception desk. To my right I noticed a girl sitting in a waiting chair. She was nervously eyeing the kid and I, as if we were intimidating her. As we passed her by to do our weekly washroom thing, she finally looked away in shame, clutching her stomache. Must be really sick, I thought and I hoped it wasn't contagious. We returned from the washroom and sat down in our choice of any chair. The girl was no longer there but I could hear a young, female voice around the corner speaking to the lady in reception. The voice was small and wavery. From what I could gather she had been waiting without checking in first. The next bit was inaudible. Then, from around the same corner, came the girl being ushered past us by the receptionist and shown toward the washroom. The girl's head was still hanging. Within a brief moment she had returned and was waiting fist in palm, head down on the edge of one of the many chairs. I'd been reprocessing all that I'd seen and I was starting to realize what was going on. In another moment, the nurse returned. Her hand found the girl's shoulder and her voice was soft and quick as she reassured the girl that the technician had her sample and would call her just as soon as there was an answer. My heart sank. It was clear now why she had been here. I wanted so badly to grab her hand, to stop her as she rushed by. To look at her straight and tell her it would be ok. That even though it felt like a death sentence now, having a child would actually make her better. That it would make her stronger and love harder than she could have ever imagined. That it would give her a drive and an eye for the world that she otherwise may never have had. But she rushed by too quickly and then she was gone. All of my urgent intentions slammed shut with the office door as I realized she wouldn't have heard me. She'd only have thought I was crazy. Some hormone fostered vehicle, sputtering lovely nonsense as mothers do.

Last night I went to bed feeling tired and ready. But as soon as my head hit the pillow the urgency returned. No thought of the girl yet, but the feeling was the same. Suddenly I burst into tears. Sobbing uncontrollably. Where had this fit of emotion come from? It's not just the hormones, I thought. It's fear. I've done this before and still I'm terrified. Not of anything in particular, just a general fear of the unknown. The fear of not being in control and with that thought the girl shot to the forefront of my mind. She must be so afraid. I lay my arm across the newly committed soul next to me allowing myself to find comfort in his quiet warmth and hoped that the girl would allow herself to find the same.

That time is swiftly approaching. Actually, it's more like time moving in reverse. For most folks christmas is here before you know it. For nine-months-pregnant-me, it'll never come. However, with my luck and some help from Murphy, I'm sure the holidays will come and go and I'll still be pregnant.



You know, there are some upsides to pregnancy. Nesting is certainly one. Here is an example of the fruits before my labour.

Always Know Where You're Going BEFORE Leaving the House


I'm usually really good with directions. But, I hate maps. I'd rather ask someone for directions. Usually before I leave the house. Except for this one day about 13 years ago. Liz needed a ride to a doctor's appointment at the hospital. I was pretty sure I knew where it was so I offered to take her. I should have been absolutely sure. I roll up to what we thought was the hospital, but something didn't look right about the place. There wasn't the usual traffic, parked ambulance or EMERGENCY entrance. We drove around a little, but Liz was pretty sure this wasn't it. Again. We should have been sure. Hell. We should have known. In fact, I'm pretty sure we were the only two idiots in the city who weren't familiar with where we were. More important at that moment was finding the right place. We needed to stop and ask for directions. No problem. Around the front of the building was a paddy wagon (might as well have been a flashing sign). Just as we pulled closer two officers were making they're way toward the back of the wagon (a flashing sign with arrows). Oh good, we thought. The police will know where to go. We'll ask them. As I put the car in park and Liz began to roll down her window, the back of the wagon opened up to reveal a crazed man in a straitjacket and shackles.

"AHHHHHHHHHHHH!!!!" we screamed.

" Oh my god Liz, it's a crazy person."

"Keep going Kath!" Urged Liz, with two fingers firm on the window button. "I don't think this is the right place."

I don't believe I've ever been lost since.

THE BEST POST EVER!

Where oh where do I start.
I was spoiled rotten. Rotten. Rotten. Rotten. Not that I would know, but it was like the day of my wedding. My intuition was in 4th gear....always one short of knowing exactly what was going to happen next, yet prepared nonetheless. All I could think was, I never want this day to end. As curious as I was about my surprise, I could wait. I just knew I could wait. My day began with a cup o' my favourite joe and their new breakfast sandwich . As I was getting ready for my big day, I was given a little something special for the finishing touch.
By 11:30 AM we had dropped the kid off at her grandparents. Little did I know they were in on it. Then we headed to Silver City to see Borat. OMFG. Way. Too. Funny. Nothin' like a little bit of neked man wrestling to start off a gal's 30th. We left the theatre and headed back home because my man said he had to "get something". Still no clue. Maybe it crossed my mind but it's been 7 years and my finger is still bare, so I wasn't getting my hopes up. He kept muttering something about 4:30PM. To buy the time, we went shopping. Before long the time had passed and we got in the car to head to the destination. Against my better judgement I was told I had to wear a blindfold. Where in the hell were we going? Time to kick out the spidy senses. Being as I had no sight, I listened. Over the course of a few turns and stops the buzz of city traffic had waned. Now I could hear only the tires against the road and the wind no longer whipped as it does when passing building after building. We were in the country now. On the road back to where we'd left the kid. But my man denied it. We got out of the car and I could feel soft ground and then pavement. "We're at my parents' aren't we?" I said. Denied again. We reached an uneven walk way, like shifted bricks, and again I said "You're such a liar! We are so at my parents'!" My exclamation was met with laughter and a glorious "Surprise!" As I was helped off with my blindfold, my eyes met many familiar faces. Some which I'd not seen in a long time. Still no clue. I thought this was it. My 30th birthday with all our friends and family. So before I lose you, let's cut to the chase. I opened gift upon gift, including a magnificent bottle of riesling from Liz, a gift card from Jen and Ang, some Gold Label from The Bestest Brother and Sister In the World and a camera from Mom and Dad that took the following pictures...










...of the best score of the decade! In front of everyone, my man got down on one knee and asked me to spend the rest of my life with him. "YES!" Actually, I'm pretty sure I said "Of course I will!"

So a big fat Thank You is in order to everyone who helped me celebrate :o) You all spoiled me rotten and I love each and everyone one of you to pieces. Pieces.

In My Dreams


I'm going out on a limb here people. I know that some of you already think I'm pretty strange. And you'd be right. And I'd be flattered. But I think this blogging thing is becoming something way more than I ever thought it would be. What did I think it would be? No clue. What is it becoming? Still no clue. What I do know, is that some of you are showing up in my dreams. Yup. You have crossed the border into my subconciousness and are gettin' cozy. You're even bringing your family. Slyde and Earl were the first. I was expecting them over for dinner. And they of course brought their families and/or (shiny!) significant others. Liz was there too. Helping me to entertain. It was like a bizarre episode of The Bachelor meets The Nine. We flirted. We ate. We drank...we got up the next day and I had nothing to prepare you for breakfast. So I impressed you with our most popular morning fuel station, Tim Hortons. Shortly after, y'all went home and I was suddenly on my way to this southern aristocratic type of political rally for women. I had no clue what I was doing there, but after a moment or two the stuffy air of the place wore off and it turned into this political sort of rave where I met up with Tits and her hubby. Somewhere in between all this mess there was Mr. Novak who had a car accident and the Canadian police confiscated his car. Now the question, to which I'm sure I can already hear your mocking answers, but of which I will ask you anyway. Have you ever had a blogmare? Or am I the only impressionable freak in the room.
